As I was falling asleep last night I was thinking about the grilled cheese I wanted to have for lunch today so when I woke up this morning I couldn’t wait for lunch time. I have probably mentioned it before but my newest obsession is grilled cheese with hummus, and the easiest/best way for me to make it is with my Panini maker. I forgot the last time I used it got messy and I forgot to clean it so here is my quick tutorial on how to easily clean appliances such as my panini maker or our quesadilla maker.
The easiest way to keep it clean all the time is to do this after every use.
Right after you are done making your food place a damp paper towel on the appliance.
Close the lid on the paper towel and turn off the appliance. Don’t leave the appliance on unless you are standing there keeping your eye on it.
Look at that, it cleaned up a lot and if you can tell the towel is actually pretty dry.
Easy right? Just remember to unplug it otherwise it is a fire hazard.

I have been craving a chocolate chip muffin for weeks now and this morning I finally made myself some and let me tell you they were delicious! I was relieved because on Wednesday I tried a new recipe for the blog and it did not turn out, I will admit I was bummed especially since that was two Wednesday recipes in a row. I think after those failures it made this success that much sweeter. I found this recipe through Pinterest on the blog Eat At Home.
For this recipe you will need flour, salt, baking powder, butter, sugar, milk, vanilla and mini chocolate chips.
Stir flour, salt and baking powder in a large bowl.
In a Separate bowl cream butter and sugar.
Add eggs, vanilla and milk and mix until well blended.
Stir wet ingredients into dry ingredients. Stir gently until just combined.
Fold in chocolate chips
I use this fantastic utensil to fill the muffin pan, it is meant specially for portioning in muffin pan.
Fill muffin pan with batter and bake for 15-20 minutes.

Chocolate Chip Muffins
2 cups flour
1/2 teaspoon salt
1 tablespoon baking powder
1/2 cup (1 stick) butter, softened
3/4 cup sugar
3/4 cup milk
1 teaspoon vanilla
1 cup mini chocolate chips
Preheat oven to 400 degrees, grease muffin pan or use liners.
Stir flour, salt and baking powder in large bowl. Cream butter and sugar in separate bowl. Add eggs, vanilla and milk to butter mixture and mix well until well blended. Add wet ingredients into dry ingredients, stir gently, just until combined. Fold in chocolate chips.
Fill greased/lined muffin pan with batter and bake in preheated oven for 15-20 minutes until slightly golden on the edges and a toothpick inserted in the center comes out clean.
