Delayed

I have to apologize for the delay in this post, it was supposed to be published yesterday but my computer was having technical difficulties. So instead of the usual Saturday post you guys get a Sunday post.

When I woke up this morning I was feeling very lazy and didn’t want to make something difficult, as much as I love cookies they can be rather time consuming. Zach left extra early this morning for his baseball games and someone was not helping with my motivation…2014-07-26 01.59.27

Chewy Butterscotch Bars

  • 1 11oz package butterscotch chips
  • 1 cup (2 sticks) butter
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 2 cups flour
  • Some chocolate chips to sprinkle on top (optional)

Preheat oven to 350.

Microwave butter and butterscotch chips until melted, stirring regularly (about 2-3 minutes). Stir sugars, eggs and vanilla into butter mixture. Stir in flour. Pour into greased 9×13 pan. Bake approximately 25 minutes.

I will be honest, this was my first recipe using butterscotch chips and I think it turned out fabulously! When I tasted the batter, I was worried it was too sweet but I think the bars turned out delicious, I can’t wait to share them!
