26 Years Later

Mid November is pretty important for our little family, four years ago on November 11 someone special came to live with us, our kitty Toews!

When we think back about how much things have changed it makes us laugh a little bit, the first night we had her, she would not leave my side now its her house and she just lets us live here. From time to time I look back at all the photos we have of her and its so weird to see how much she really has changed, when we first got her she was so skinny and stayed that way for awhile, we were worried she wasn’t eating enough, then we got her fixed and we no longer worry if she is eating enough. It is weird to me because both Zach and I feel like we can’t remember what it was like before we had our little troublemaker, she is so much a part of our life.

Toews is not the only reason Mid November is important to our little family, it is also Zach’s Birthday! So this year I have been baking something special to celebrate birthdays, I knew what I was going to make for Zach before I even started this blog, Funfetti Cupcakes from scratch! I also got up at 6:30am to bake him Jiffy blueberry muffins because they are his favorite. Nothing says ‘I Love You’ like 6:30 in the morning, especially from me, I am not a morning person, but it was worth it for my hubby!

I know I have mentioned it before but Zach is the King of surprises, you have to wake up pretty early (literally) to get a surprise on him though. He did wake up before I had even put the muffins in the oven but he was good and didn’t peek before they were done, even though I am sure he knew exactly what I was making him. His friend Eric really did get a surprise on him, he built him his own double Kool-Aid tap, seriously, it’s actually pretty awesome and Zach loves Kool-Aid so he was super excited.

Anyway on to the yummy stuff cupcakes!

For this recipe you will need flour, baking powder, salt, eggs, sugar, butter, vanilla, milk and sprinkles.

Whisk flour, baking powder and salt in a medium bowl.

Beat eggs and sugar in a stand mixer with paddle attachment until light and foamy. (Approximately 2 minutes)

While beating slowly pour in melted butter then vanilla.

While mixing add half the dry ingredients, then add all the milk and finally the rest of the dry ingredients. Do Not Over Mix!

Gently fold in sprinkles.

Pour into cupcake pan. I added more sprinkles to most because Zach doesn’t like frosting and I wanted them to look more colorful.

Bake 20-25 minutes. you may frost them after they have completely cooled. My chocolate frosting would be fantastic with these cupcakes!

Funfetti Cupcakes

  • 1 1/2 cup flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2/3 cup sugar
  • 3/4 cup butter, melted
  • 2 teaspoons vanilla
  • 1/2 cup milk
  • 1/2 cup sprinkles

Preheat oven to 350. Grease or line cupcake pan.

Whisk together flour, baking powder and salt in a medium bowl.

Beat eggs and sugar in a stand mixer with the paddle attachment until light and foamy (for about 2 minutes). While beating slowly pour in melted butter then vanilla.

While mixing add 1/2 the dry ingredients then add all the milk and finally the remaining dry ingredients. Do Not Over Mix! Gently fold in sprinkles.

Pour batter into cupcake pan. Add additional sprinkles if desired. Bake 20-25 minutes. Allow cupcakes to cool completely before frosting if desired, check out this post if you are looking for frosting recipes.

A Sprinkle of Love

Today is a special day, it is my mother in law Mary’s birthday! For months I have known that I would be making something for her and featuring it on my blog but I have had such a hard time deciding what to make for her special day. A few months ago she gave me a challenge to make that I was originally going to make, but I changed my mind, I will make it before the end of the year, I promise!

Mary is one of my biggest supporters, not only did she make my fabulous banner you see at the top of this page, as a fellow blogger it has been great to bounce ideas off her, we even have a few projects in the works to be featured on here so stay tuned! This weekend is her class reunion and it really got me thinking because, ten years ago I was invited to the family picnic part of the reunion since I was her son’s girlfriend of almost a year. We have almost eleven years of memories and I am so grateful that Mary welcomed me into her family with open arms from day one.

Well this past weekend when I was in my baking mood I texted my trusty taster (Mary) asking what cookies I should make, when she replied with frosted sugar cookies, I knew I had a winner for her birthday, especially since I had just some across and intriguing recipe on Pinterest that morning. When I posted my puppy chow post I asked what your favorite treats were as a kid Mary mentioned sugar cookies and how she would make them with her mom at Christmas, so I wanted to make them a little different than her fantastic Christmas sugar cookies, seriously they are one of my two favorite sugar cookies, the other is my co-worker Sue’s, my mouth is watering just thinking of all these cookies! Well now I have a third favorite to add to theirs!

For the cookies you will need butter, sugar, egg, vanilla, flour, baking powder, baking soda, cream of tartar and salt.

Beat together butter and sugar on low until light and fluffy, about 2-3 minutes.

Beat in egg and vanilla.

Gently fold in flour, baking powder, baking soda, cream of tartar and salt.

Scoop out dough with medium scoop and refrigerate at least 2 hours. (I let it sit overnight in an air tight container in the refrigerator.)

When you are ready to bake preheat oven to 350 and put cookies from the fridge on baking sheets.

Bake 10-12 minutes. Remove from oven and cool completely on baking sheets before removing.

While the cookies are baking it is time to make the frosting! You will need butter, powdered sugar, vanilla and heavy cream. Oh and don’t forget the sprinkles!

Beat butter on low speed until light and fluffy.

Gently mix in powdered sugar and vanilla.

Pour a tablespoon of heavy cream at a time, beating until you reach desired consistency. (I used all three tablespoons.)

Now the fun part! Frost the cookies as desired.

Frosted Sugar Cookies

For the Cookie:

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon salt

In a mixing bowl add butter and sugar, beat on low until light and fluffy, about 2-3 minutes. Beat in egg and vanilla, scrape sides of the bowl with a spatula. Gently fold in flour, baking powder, baking soda, cream of tartar and salt. Scoop out dough using a medium scoop and refrigerate at least two hours, I recommend overnight. (Do Not skip refrigerating the dough, your cookies will not turn out the same!)

When ready to bake preheat oven to 350, place chilled dough onto baking sheets and bake 10-12 minutes. Remove from oven and cool completely on baking sheets before removing.

For the Frosting

  • 6 tablespoons butter, softened
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • 2-3 tablespoons heavy cream

Add butter to mixing bowl, beat on low until light and fluffy. Gently mix in powdered sugar and vanilla. Add heavy cream a tablespoon at a time to reach desired consistency.

Spread about a tablespoon of frosting over each cookie and decorate with colorful sprinkles.

Don’t Knock it Till You Try it!

A few years ago Zach introduced me to a favorite snack of his dad’s, Fritos with peanut butter, I was skeptical at first too, but you have to try it, there is something about the crunchy chip with the smooth, creamy peanut butter. I have been planning this blog post for months, after I stumbled across this recipe on Pinterest using peanut butter and Fritos, you see yesterday was a very special day, it was my father in law Dave’s 50th birthday!

When I saw this “cookie” made with peanut butter, Fritos and a few other ingredients I knew I had to make them for him! I will admit I was curious to see how these would turn out, I got mixed reactions when I told people I was going to make this recipe. Well they did not disappoint, I had to sample a few to make sure I wasn’t giving him something horrible, and I couldn’t stop, I told Zach under no circumstances was he to allow me back in the kitchen, for real I could not stop!

For this recipe you will need Fritos, light corn syrup, sugar and creamy peanut butter.

Spread chips on a greased or lined 15x10x1 baking sheet.

Over medium heat bring corn syrup and sugar to boil, stirring frequently to dissolve sugar. Boil for about 1 minute then remove from heat and stir in peanut butter until smooth.

Pour mixture over chips. Let cool.

PB Frito No Bake Cookies

  • 1 bag Fritos chips
  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 cup peanut butter

Spread corn chips on a greased or lined 15x10x1 baking sheet.

In a saucepan over medium heat bring corn syrup and sugar to a boil, stirring frequently to dissolve sugar. Boil for about one minute and remove from heat; stir in peanut butter until smooth. Pour over chips (careful it comes out faster than I expected) and let cool.

How easy is that?

Lazy Night

The title tells you so much about my day doesn’t it? I was not feeling making much of anything, so I decided to let someone else take care of that, but more on that later.

I am so excited to share some blog related news with you guys! The blog has a new home: koalafiedwife.com! Everything has been transferred and if you visit the koalafiedcl.wordpress.com it should automatically forward you here. This was a big decision for me to purchase this domain name and I am so excited about it! Please let me know if you experience any problems and I will try to fix them.

After work today I was talking with one of my coworkers, I was telling her how I had no desire to make anything tonight even though I had a great idea for this post. So stay turned this weekend for that idea! Anyway she suggested that I blog about how sometimes you just don’t feel like cooking and I thought that was a fantastic idea. Thanks Mary Kay!

I had the day off on Monday and ended up at the dentist because of some issues that were causing me problems all last week, don’t worry all is good and my dentist was optimistic. I don’t know about you guys but I am never particularly excited to go to the dentist, so I decided to reward myself for going to the dentist I would go to Panera, well actually my dad treated me to lunch since he gave me a gift card there, thanks Dad! I went through the new drive thru and accidentally ended up without two of my items, it was no big deal, who hasn’t had this happen? So I ran inside to get the items I missed and I was blown away by the service, they insisted on refunding me for the items I didn’t get at the drive through and they replaced them, I could not believe it!

I quickly came home and emailed Panera to let them know how much I appreciated the service, I thought they really went above and beyond.

Well tonight I was thinking I needed some pasta and since Panera has some delicious selections so I ended up at Panera, I had to go back after my superb service on Monday.

First I ordered a frozen caramel, which as someone who doesn’t really like coffee, I can’t get enough of these!

To go with my dose of caffeine I ordered mac and cheese and tortellini with alfredo, I couldn’t decide between the two, I figured Zach can have leftovers when he gets home from work or I can have leftovers later.

Oh I was in pasta heaven!!

When I finally got my order the girl working the window apologized for the wait, I wasn’t in a hurry so it didn’t bother me in the least, and even if I had been it wasn’t too bad of a wait. I thanked her and put the bag next to me when I heard someone say hold on, I turned back to the window and a manager handed me a bag and again apologized for the wait, I told him it really wasn’t necessary, but he insisted. I called Zach and told him Panera is my new favorite restaurant, when I got home I looked in my little bag and found this huge cinnamon roll!

Guess what I am having for breakfast in the morning! I can’t wait.

Hold on, it doesn’t end there, when I opened my large bag with my pastas, I found another little something, I laughed to myself and took a picture that I immediately sent to Zach.

That’s right an oatmeal raisin cookie! I told Zach they must have known and gave him a little something too, you know since I refuse to put raisins in the cookies I make.

These days I don’t think we do enough to appreciate when we have a positive experience, I hear way more about negative experiences, so I think when you have an exceptional experience, like I did, it should be acknowledged. Thank you Panera!

Wow this was a long post just to say I got take out for dinner because I felt lazy but I just had to gush about how awesome Panera is, seriously if you are in the DeKalb and are hungry, I can’t say enough good things about our Panera. Now I guess I better go do something productive and finish up some laundry.

On a side note today is someone special’s birthday! Happy Birthday Judge Brady! I have clerked for Judge Brady since I first started my job 7 years ago and he also is the one who officiated Zach and my wedding last year!
