I have to apologize for the delay in this post, it was supposed to be published yesterday but my computer was having technical difficulties. So instead of the usual Saturday post you guys get a Sunday post.
When I woke up this morning I was feeling very lazy and didn’t want to make something difficult, as much as I love cookies they can be rather time consuming. Zach left extra early this morning for his baseball games and someone was not helping with my motivation…
Finally after wasting time on Pinterest looking at recipes I came across a recipe for chewy butterscotch bars from one of my favorite blogs Peanut Butter Fingers, you can see the original recipe here. It looked pretty easy and since I was not feeling motivated these seemed perfect!
For this recipe you will need, butterscotch chips, butter, brown sugar, granulated sugar, eggs, vanilla and flour.
Microwave butter and butterscotch chips until melted, stirring regularly (about 2-3 minutes).
Stir sugars, eggs and vanilla into butter mixture. Stir in flour.
Pour into greased 9×13 pan.
I forgot to preheat the oven, so while I was waiting I decided these bars needed some chocolate chips.
Bake approximately 25 minutes.
Chewy Butterscotch Bars
1 11oz package butterscotch chips
1 cup (2 sticks) butter
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
2 teaspoons vanilla
2 cups flour
Some chocolate chips to sprinkle on top (optional)
Preheat oven to 350.
Microwave butter and butterscotch chips until melted, stirring regularly (about 2-3 minutes). Stir sugars, eggs and vanilla into butter mixture. Stir in flour. Pour into greased 9×13 pan. Bake approximately 25 minutes.
I will be honest, this was my first recipe using butterscotch chips and I think it turned out fabulously! When I tasted the batter, I was worried it was too sweet but I think the bars turned out delicious, I can’t wait to share them!
