When I first started this blog I promised myself I would never write a post that wasn’t positive or a post that I wouldn’t enjoy reading if I found it on someone else’s blog. Well I will tell you this past week I was not in a very positive mood, I even typed up posts but could not bring myself to post them, they were just negative and I didn’t even enjoy reading over them, why would I expect you to enjoy reading them? They were not really me, they were just a reflection of the negativity I was feeling last week. However the good news of my hiatus from the blog means I have several recipes to share over the next posts!

Recently I started following a blog called National Day Calendar every day has multiple National events, for instance October 2 was National Name Your Car Day and October 3 was World Smile Day. Well according to this blog today is National Do Something Nice Day, when I read that I loved the idea so much, I try to do nice things for others all the time but an actual day for it…that sounds like a fabulous idea! Well I woke up a little early this morning (not before Zach though) and made Zach’s favorite blueberry muffins…no not from scratch, it was the Jiffy brand in the little box, it is Zach’s favorite. Originally I wanted to get up early and make them and wake him up with them, but somebody was up extra early this morning. He was still happy I made him muffins and he thoroughly enjoyed them!

Since I was making a conscious effort to do something nice today it made me notice other nice things, it was fun, I noticed Zach took the time when he was rearranging some things in our living room to stop and play with our kitty because she was curious about what he was doing, she very much enjoyed play time. Not only did it make Toews happy, but it made me happy watching the two of them and Zach seemed to enjoy teasing her.

This week had to start on the right foot so I wanted to make some cookies! I know I have mentioned it before but chocolate chip cookies always make me feel better, and baking always relaxing me so I decided to try a different recipe for chocolate chips cookies. Not to worry faithful readers, I am not abandoning my chocolate chip cookie recipe I posted back in July, I just wanted to try a different way of making my favorite cookie. Zach has given me the task of making a giant chocolate chip cookie for a future blog, with surprisingly specific requests, I will keep you guys updated!

Bisquick Cookies 1

For this recipe you will need butter, brown sugar, vanilla, egg, Bisquick and chocolate chips (I used a combination of milk chocolate and mini chocolate chips).

In a large bowl mix softened butter, sugar, vanilla and egg.

(I was too impatient to wait for my butter to soften so I used my trick to grate the butter to speed up the softening, if you are wondering why it look a little different, but it works!)

Stir in Bisquick and chocolate chips.

Drop by rounded spoonful onto ungreased baking sheet, I used my cookie scoop. Flatten slightly, I just used my fingers (don’t worry when I bake I am constantly washing my hands).

Bake 8-10 minutes or until golden brown. Remove from baking sheet to cooling rack.

Bisquick Chocolate Chip Cookies

  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 2 teaspoons vanilla
  • 1 egg
  • 2 3/4 cup Bisquick baking mix
  • 1 cup chocolate chips

Preheat oven to 375.

In a large bowl combine butter, sugar, vanilla and egg. Stir in Bisquick and chocolate chips. Drop by rounded spoonful onto ungreased baking sheet, flatten slightly. Bake 8-10 minutes or until golden brown. Remove from baking sheet to cooling rack.

I definitely ate like six while they were cooling. These were so simple, who would have thought I could find an even easier recipe for chocolate chip cookies?

Muffin Top

As I was falling asleep last night I was thinking about the grilled cheese I wanted to have for lunch today so when I woke up this morning I couldn’t wait for lunch time. I have probably mentioned it before but my newest obsession is grilled cheese with hummus, and the easiest/best way for me to make it is with my Panini maker. I forgot the last time I used it got messy and I forgot to clean it so here is my quick  tutorial on how to easily clean appliances such as my panini maker or our quesadilla maker. The easiest way to keep it clean all the time is to do this after every use.

Right after you are done making your food place a damp paper towel on the appliance.

Close the lid on the paper towel and turn off the appliance. Don’t leave the appliance on unless you are standing there keeping your eye on it.

Look at that, it cleaned up a lot and if you can tell the towel is actually pretty dry.

Easy right? Just remember to unplug it otherwise it is a fire hazard.

After a few rounds of cleaning my Panini maker I had a nice clean Panini press ready to make a grilled cheese. Yummy!Grilled Cheese

I have been craving a chocolate chip muffin for weeks now and this morning I finally made myself some and let me tell you they were delicious! I was relieved because on Wednesday I tried a new recipe for the blog and it did not turn out, I will admit I was bummed especially since that was two Wednesday recipes in a row. I think after those failures it made this success that much sweeter. I found this recipe through Pinterest  on the blog Eat At Home.

Chocolate Chip Muffins 1

For this recipe you will need flour, salt, baking powder, butter, sugar, milk, vanilla and mini chocolate chips.

Stir flour, salt and baking powder in a large bowl.

In a Separate bowl cream butter and sugar.

Add eggs, vanilla and milk and mix until well blended.

Stir wet ingredients into dry ingredients. Stir gently until just combined.

Fold in chocolate chips

I use this fantastic utensil to fill the muffin pan, it is meant specially for portioning in muffin pan.

Fill muffin pan with batter and bake for 15-20 minutes.

Chocolate Chip Muffins

  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1/2 cup (1 stick) butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 3/4 cup milk
  • 1 teaspoon vanilla
  • 1 cup mini chocolate chips

Preheat oven to 400 degrees, grease muffin pan or use liners.

Stir flour, salt and baking powder in large bowl. Cream butter and sugar in separate bowl. Add eggs, vanilla and milk to butter mixture and mix well until well blended. Add wet ingredients into dry ingredients, stir gently, just until combined. Fold in chocolate chips.

Fill greased/lined muffin pan with batter and bake in preheated oven for 15-20 minutes until slightly golden on the edges and a toothpick inserted in the center comes out clean.

Happy Belated 4th of July!

I started my day off by sleeping in and it felt wonderful! After letting me sleep Zach woke me up for a later breakfast and we ate outside at our brand new patio set! Zach’s parents surprised us with it Thursday night as a first anniversary gift. We love it and the chairs rock which is awesome! Most years we usually spend most of the day at Zach’s baseball game on the 4th of July, however this year it was cancelled so we had all day to do whatever we wanted! Apparently I was in the mood to bake, I pulled out my chocolate chip cookie recipe figuring I could bring them to the family get together we were going to later. These cookies always turn out so good, so I really enjoy making these because I don’t have worry if they will out. These cookies are foolproof.

For this recipe you will need butter, granulated sugar, brown sugar, vanilla, eggs, flour, baking soda, salt and chocolate chips.

Beat butter, both sugars and vanilla until creamy.

(If you are in a hurry you can use a grater to “soften” your butter, which happens to be what I did this time)

Beat in eggs until light and fluffy.

This little guy is the “secret” to my cookies. They always come out uniform in shape and are always the perfect amount of chewy.

Drop by rounded tablespoonful onto ungreased cookie sheets.

Bake 8-11 minutes or until edges are golden brown. Cool on baking sheet for 2 minutes then move to wire racks.

Christina’s Chocolate Chip Cookies

  • 2 Sticks (1 cup) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 teaspoon vanilla extract
  • 2 eggs
  • 2 1/3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups (12 ounce package) chocolate chips (I always use mini chocolate chips)

Preheat oven to 375. Beat butter, both sugars and vanilla until creamy. Beat in eggs until light and fluffy. Beat in flour, soda and salt on low speed until mixed. Stir in chocolate chips. Drop by rounded tabespoonful 2 inches apart on to ungreased baking sheets. Bake 8 to 11 min or until edges are golden brown. Cool on baking sheet 2 minutes; move to wire racks.
