Lazy Night

The title tells you so much about my day doesn’t it? I was not feeling making much of anything, so I decided to let someone else take care of that, but more on that later.

I am so excited to share some blog related news with you guys! The blog has a new home:! Everything has been transferred and if you visit the it should automatically forward you here. This was a big decision for me to purchase this domain name and I am so excited about it! Please let me know if you experience any problems and I will try to fix them.

After work today I was talking with one of my coworkers, I was telling her how I had no desire to make anything tonight even though I had a great idea for this post. So stay turned this weekend for that idea! Anyway she suggested that I blog about how sometimes you just don’t feel like cooking and I thought that was a fantastic idea. Thanks Mary Kay!

I had the day off on Monday and ended up at the dentist because of some issues that were causing me problems all last week, don’t worry all is good and my dentist was optimistic. I don’t know about you guys but I am never particularly excited to go to the dentist, so I decided to reward myself for going to the dentist I would go to Panera, well actually my dad treated me to lunch since he gave me a gift card there, thanks Dad! I went through the new drive thru and accidentally ended up without two of my items, it was no big deal, who hasn’t had this happen? So I ran inside to get the items I missed and I was blown away by the service, they insisted on refunding me for the items I didn’t get at the drive through and they replaced them, I could not believe it!

I quickly came home and emailed Panera to let them know how much I appreciated the service, I thought they really went above and beyond.

Well tonight I was thinking I needed some pasta and since Panera has some delicious selections so I ended up at Panera, I had to go back after my superb service on Monday.

First I ordered a frozen caramel, which as someone who doesn’t really like coffee, I can’t get enough of these!

To go with my dose of caffeine I ordered mac and cheese and tortellini with alfredo, I couldn’t decide between the two, I figured Zach can have leftovers when he gets home from work or I can have leftovers later.

Oh I was in pasta heaven!!

When I finally got my order the girl working the window apologized for the wait, I wasn’t in a hurry so it didn’t bother me in the least, and even if I had been it wasn’t too bad of a wait. I thanked her and put the bag next to me when I heard someone say hold on, I turned back to the window and a manager handed me a bag and again apologized for the wait, I told him it really wasn’t necessary, but he insisted. I called Zach and told him Panera is my new favorite restaurant, when I got home I looked in my little bag and found this huge cinnamon roll!

Guess what I am having for breakfast in the morning! I can’t wait.

Hold on, it doesn’t end there, when I opened my large bag with my pastas, I found another little something, I laughed to myself and took a picture that I immediately sent to Zach.

That’s right an oatmeal raisin cookie! I told Zach they must have known and gave him a little something too, you know since I refuse to put raisins in the cookies I make.

These days I don’t think we do enough to appreciate when we have a positive experience, I hear way more about negative experiences, so I think when you have an exceptional experience, like I did, it should be acknowledged. Thank you Panera!

Wow this was a long post just to say I got take out for dinner because I felt lazy but I just had to gush about how awesome Panera is, seriously if you are in the DeKalb and are hungry, I can’t say enough good things about our Panera. Now I guess I better go do something productive and finish up some laundry.

On a side note today is someone special’s birthday! Happy Birthday Judge Brady! I have clerked for Judge Brady since I first started my job 7 years ago and he also is the one who officiated Zach and my wedding last year!



Easy Peasy

First things first, as you guys may notice I have a brand new banner! My fabulously talented Mother in law Mary made it, the adorable koala is courtesy of Stampin’ Up! Yay! I hope you guys like my banner as much as I do, it makes me feel like this is the real deal! Over the next week or so you may notice some changes to the blog, I am changing the address for the blog from to When I first started this blog I picked my web address before I fully decided on my blog name. I believe in the long run having my address match the blog name will be beneficial. Please let me know if you experience any problems, you shouldn’t have to change anything if you subscribe and if you visit the original web address is should automatically redirect you to the new one with all the same content!

About a year ago I came up with an easy and delicious recipe one night when Zach was working and I wanted pasta but a little special. I find that when Zach isn’t home I tend to try new things, some work, some not so much. This was definitely one that worked! It is so easy to make and only has three ingredients. As I have covered before I love pasta and cheese so of course I loved it, but the real test was Zach, and he actually likes this dish too!

Alfredo Bake 1

For this recipe you will need pasta, alfredo sauce and cheese.

Cook pasta.

Drain pasta and put in greased 8×8 pan and pour sauce over pasta and mix well.

Sprinkle with a little pepper and spread cheese over dish.

Bake for 30 minutes until cheese is toasted.

Enjoy! (I also made some cheesy bread with Rhodes Rolls.)

Alfredo Bake

  • 1 box of pasta (I like Farfalle)
  • 1 jar Alfredo sauce
  • Shredded cheese to sprinkle on dish
  • Can also add chicken if desired

Preheat oven to 350.

Make pasta according to directions. Drain and pour cooked into greased 8×8 baking dish. Combine pasta with alfredo sauce and mix well. Sprinkle a little pepper and handful of cheese over dish. Bake for 30 minutes until cheese is toasted.

On a side note my In laws celebrated 28 years of marriage on Saturday! I feel so lucky that Zach and I have them to look up to and hope that after 27 more years we are as happy as they are!

I Made Tetrazzini So There

Every year after Thanksgiving my mother in law Mary would make one of my absolute favorite meals with leftover turkey. Since it has been so chilly for July I finally pulled out the recipe to attempt making it for the first time myself. I will admit I was slightly intimidated because it is always so delicious when Mary made it, then it hit me, I couldn’t compare mine to hers, she was a pro at this and I was just trying it for the first time. I think it turned out pretty well, I will definitely be making it again!

For this recipe you will need, Angel Hair pasta, onion, butter, flour, salt, white pepper, poultry seasoning, ground mustard, milk, shredded cheese and chicken. (The chicken is not pictured because it was still baking)

Cook pasta for about 4 minutes until almost tender.

Melt butter in saucepan, add onion cook and stir until tender. (I omitted the onion)

Stir in flour until well blended, then gradually add milk and stir so no lumps form.

Season with salt, pepper, poultry seasoning and mustard. Cook over medium heat stirring constantly until it thickens.

Remove from heat and add cheese. Stir until cheese melts.

Stir in pasta and cooked chicken.

Place in 8×8 baking dish. Top with remaining cheese.

Bake for 25 minutes at 400 until sauce is bubbly and cheese is toasted

Turkey Tetrazzini

  • 1 8oz package Angel Hair pasta
  • 2/3 cup sliced onion
  • 1/4 cup butter
  • 1/4 cup all purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon poultry seasoning
  • 1/4 teaspoon ground mustard
  • 2 cup milk
  • 1 cup shredded sharp cheddar or Mexican blend cheese
  • 1 pound cooked, chopped turkey (I substitute chicken)

Preheat oven to 400

Bring large pot of water to boil. Add pasta and cook for about 4 minutes (until almost tender). Drain.

I served it with some cheesy bread that I made with Rhodes Rolls, that is one of my favorite go to sides, if I remember to take the rolls out in time for them to rise.

Meal for a Champion

My Husband has a slight obsession with whiffle ball, seriously, the morning we got married he woke up at 5:30am to get in a few games. He gets together with anywhere from one friend for some one on one, to a whole group. This is serious stuff, they have even made a mound and “players” for the field, and there is even a website with stats. I will admit I have made a few appearances in these games, usually I only play when it is just Zach and I (I am not particularly athletic) but he makes special rules just for me, I know he loves me.

Last night I was recruited to play whiffle ball with Zach and two of his friends, Eric and I teamed up against Zach and Seth, we took the name “Team Pink Bat” (because Zach got me a special pink bat for Easter). Team Pink Bat won 9-4! A win like that deserved a special treat!

When we got home knew I had to make my favorite meal to celebrate winning! Drum roll please! Mac & Cheese! I love cheese and pasta so combine them and I am a happy camper! Boxed mac & cheese has never hit the spot for me, I am a homemade kind of girl. I have tried many recipes thanks to Pinterest but none of them were ever quite what I was looking for until I stumbled across this one on Back on Pointe, of course I had to make a few changes to make it exactly what I wanted but I had found the perfect mac & cheese, I could eat this cheesy goodness everyday! (I am going to apologize now for the photo quality.) The recipe is included at the bottom of this post.

Let’s get started! To make my Perfect Mac & Cheese you will need pasta, cheese, butter, flour, salt and milk.

First cook the pasta. When pasta is done and drained, in the same pot over medium low heat melt butter.

Mix in flour and salt and stir until it is a thick paste (about 30 seconds)

Add in milk and let heat for about 1 minute.

Add cheese, stir for about 2 minutes until it is completely melted and has become a thick, creamy sauce.

Add drained pasta into sauce and stir until pasta is evenly coated.

Perfect Mac & Cheese

  • 1 box Rotini Pasta (I have also used Penne)
  • 2 cups Shredded Cheese (I use a little more – I like it extra cheesy)
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 1/4 teaspoon Salt
  • Slightly less than 1 cup Milk (I use 1%)

Cook pasta. When pasta is done and drained in the same pot over medium low heat melt butter. Mix in flour and salt and stir for about 30 seconds until it is a thick paste. Add in milk and let heat for about 1 minute. Add in cheese, stir for about 2 minutes until it is completely melted and a thick creamy sauce has formed. Add drained pasta to sauce and mix well until evenly coated. Enjoy!

For this recipe you can also pour the cheesy noodles in a greased baking dish, sprinkle with a little more cheese and bake at 350 for 25 -30 minutes.
